Ingredients

  • Spaghetti: 320 g
  • Stracchino: 200 g
  • Garlic: 1 Clove
  • Whole milk: 3 tbsp
  • Extra virgin olive oil
  • Black pepper
  • Shrimp: 400 g
  • Saffron: 1 sachet
  • White wine: ½ glass
  • Parsley
  • Salt
  • Chili Powder

Instructions

To prepare spaghetti with shrimps, stracchino and saffron, first clean the shrimps. Put on a pair of latex gloves and remove the head (1), tail and carapace (2) using light pressure. Then, using a toothpick, gently remove the black filament (3).

Do the same for all the others and when you have finished cleaning them, rinse them quickly (4). Place them on a tray and, using a sheet of kitchen paper, pat them dry to remove excess water (5). Now move on to the stracchino cream: pour it into a bowl (6),

Add the milk (7) and stir with a fork until the mixture is creamy (8). Then crush a clove of garlic using the blade of a knife (9).

Bring a saucepan full of water to the boil and add salt to cook the pasta. Pour a little oil into a frying pan with the freshly crushed garlic (10); allow it to brown, then add the shrimps and stir-fry for half a minute over a high flame (11). Then, add the white wine (12).

And when it is completely evaporated, add the chilli powder (13), the stracchino (14) cream and the saffron (15).

Stir well and cook until the cheese has melted (16). Meanwhile, chop the parsley (17) and cook the pasta (18).

Cook the pasta and drain it (19) and put it in the pan with the sauce (20). Remove the garlic clove (21).

And stir the pasta together with the sauce (22). At this point, garnish with parsley (23) and serve your spaghetti with shrimps, stracchino and saffron (24).

Storage

It is recommended to eat the pasta as soon as it is made. You can also store it in the fridge for a day.

Tip

If the sauce becomes too thick, you can add a few tablespoons of milk!
